Ingredients

Ingredients (for 4 people)

• 1 carrot

• 1 potato

• 1 butternut squash

Dida Boža green olive spread

• 1 onion

• 2 cloves garlic

• a pinch of ground nutmeg

• a pinch of salt

• a pinch of pepper

• a pinch of chilli powder

• Olive oil

• Pumpkin seeds

• Cooking cream for decoration

Preparation

Autumn fruits and the olive spread prepared in a delicious butternut soup will surely delight you.

Preparation:

Sauté onion on olive oil. Then, add chopped garlic and carrots cut into small cubes. When the ingredients are done, add the potatoes and squash chopped into smaller cubes. You will clean the squash by first removing the bottom and the top, then peeling the skin. Cut it in half and remove the seeds. Use squash meat as stated earlier. Stir everything together, and add water until all ingredients are completely covered. If you want to make the flavor of the soup more intense, cook the vegetable stock and add it instead of water. Leave the dish to cook with occasional stirring. Season with the spices listed in ingredients. When the squash and potatoes have completely softened and the water has boiled, remove the dish from the heat. Blend all the ingredients with a hand blender to get a creamy soup. Serve warm in deeper bowls, add Dida Boža green olive spread and decorate with cooking cream. For better taste, sprinkle some pumpkin seeds.
